Quick answer: how fresh should coffee be?
The National Coffee Association says roasted beans taste best when you grind and brew them about 2 to 7 days after roasting, once they have rested 2 to 3 days. Whole beans then keep 1 to 3 weeks at room temperature. Massachusetts is small enough that a bag from a roaster here can reach you inside that window.

Why coffee needs a few days before it peaks
Fresh out of the roaster, beans are still giving off carbon dioxide. Wikipedia's coffee roasting article explains that this is why coffee must degas for several days before it can be vacuum sealed, and why many roasters pack into bags with a pressure relief valve instead. That gas is also what makes the bloom when hot water first hits fresh grounds.
Roasters do not all give the same rest. The NCA's general figure is 2 to 3 days. Gracenote in Boston roasts online orders to order, ships on Mondays, Wednesdays and Fridays, and suggests resting its beans 6 to 12 days, depending on the origin and on whether it is a drip or an espresso roast. Where Massachusetts roasters roast, west to east

How to use the roast date
- Find the roast date on the bag. Our guide to choosing coffee beans covers what else to read on the label.
- Count forward. Give the beans the rest the roaster suggests, or the NCA's 2 to 3 days if it gives none.
- Brew in the peak window. The NCA's 2 to 7 days after roasting is when the flavor is at its best.
- Finish the bag in about three weeks. That is the top of the NCA's room temperature range for whole beans. Freeze what you will not reach by then.
- Buy only a week or two ahead. The NCA's buying advice is smaller batches, more often.

How long after roasting should I brew coffee?
The NCA says about 2 to 7 days after roasting, after the beans have rested 2 to 3 days. Some roasters suggest a longer rest for their own coffees, so check the bag.
Is coffee too fresh right after roasting?
It can be. Fresh beans are still releasing carbon dioxide, which is why the NCA suggests a rest of 2 to 3 days before grinding.
How long do roasted beans stay fresh?
About 1 to 3 weeks at room temperature in a sealed, dark container, and 3 to 4 months frozen in a truly airtight one, by the NCA's figures.
