Snowy Owl Coffee Roasters is one of the beloved local roasters we follow in Massachusetts: an independent roaster based in Sandwich, founded in 2015. Here is what their own pages and public sources say about them, in our words.
Their story
Snowy Owl Coffee opened on Cape Cod in 2015 and has sourced, roasted and served specialty coffee there ever since. The name is a tribute to Cesar Ainzuain, who died in 2013. His children had brought him a plush owl pillow in hospital, and after his death all four of them began seeing owls, from Southern Oregon to Peru to the winter beaches of Cape Cod. The family treats each owl sighting as a sign of his legacy. The company buys from importers, small-lot growers and cooperatives focused on sustainability, economic development and education, and has several direct trade partnerships. It aims to make specialty coffee feel approachable and fun rather than rigid.
Its Chatham espresso bar opened in summer 2018 as a seasonal spot, open from mid-spring through Chatham's First Night celebration on New Year's Eve. In 2021 it opened a cafe on Route 6A in Sandwich, which became the base for all roasting and baking. The Brewster cafe moved to a larger space on Underpass Road with room for breakfast and lunch, and after 3 p.m. it becomes Night Owl, with wine, beer, small plates, live music and community events.
Peru is a recurring thread: the Inka Espresso blends lots from Cajamarca and Cusco, and the Sandwich cafe serves a Peruvian-style empanada.
What they roast
Roast levels run light, medium and dark. House blends include Brewster Blend, Captain Crosby Blend, Jaws Blend, The Night Owl (darker roast) and Peru Inka Espresso. Single origins on the list when we checked: Kenya Karinga AA, Rwanda Huye Mountain natural, Peru Cajamarca and Cusco Peru Yuraq Yaku. Inka Espresso, a medium to full body blend from two Peruvian growing regions, Cajamarca and Cusco. Decaf Colombia Popayan, a community lot from small producers sourced through Cofinet. Decaf method not named on the listing. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.
Where to drink it
Roasting moved to the Sandwich cafe on Route 6A, which is open to the public. It also runs a Brewster coffee house and a seasonal Chatham espresso bar. Our lists had the town as Brewster, where the first cafe opened.
