Jaho Coffee Roaster is one of the beloved local roasters we follow in Massachusetts: an independent roaster based in Salem, founded in 2005. Here is what their own pages and public sources say about them, in our words.
Their story
Anil Mezini founded Jaho in 2005 as a single cafe in historic Salem. Two decades on it has nine locations across greater Boston and in Tokyo, and it remains independent and family owned. It describes itself as a family-run roastery and bakery built around the people who gather at its tables. Its slogan, Live Slow, comes from the slow living culture Mezini saw while studying in Japan, where he found that simple shared rituals like coffee hold life's best moments. Japanese touches run through the menu, with coffees named Kissaten No. 3, Koyo and Shibuya Drift.
All of its coffee is roasted at the main roastery and bakery on Canal Street in Salem. Its wholesale program serves restaurants, hotels, cafes and offices, stressing direct trade, custom blends, equipment sales and service, and staff training at its training lab. Jaho takes decaf seriously: its decaf blends are Swiss Water Process and it sells a dedicated decaf subscription.
What they roast
Roast levels run light, medium and dark. House blends include Scarlet Espresso, Black Derby, Mr. Pablo, Salam, Hawthorne No. 7, North Shore Fog, Kissaten No. 3, Koyo, Shibuya Drift and Spirit Bomb. Single origins on the list when we checked: Ethiopia Guji Kayon Mountain, Kenya Murang'a Githiga Peaberry, Colombia Huila Pink Bourbon, Guatemala Santa Rosa Blue Ayarza, Brazil Minas, Indonesia Aceh Sumatra Gayo and Vietnam Lam Dong Phin Noir. Scarlet Espresso, built for sweetness with dark cocoa, hazelnut and butterscotch notes, plus a decaf espresso blend called Soft Launch. Three Swiss Water Process decafs: Velvet Hour (dark), Soft Launch Espresso (medium) and Unwritten (light-medium), plus the In-Between the Lines half caf.
