What dark roast means
Dark roast is coffee roasted into or past second crack, the second round of popping near 224 °C (435 °F). The beans turn dark brown to nearly black and oil rises to the surface. Roast flavors take over the cup, bittersweet and smoky, with a full body, low acidity and little left of the coffee's origin.
In the roaster
After first crack, the roaster keeps the heat on. A few minutes later the beans begin to crack again, faster and quieter, as the bean's structure turns brittle and fractures under internal pressure. That is second crack. From here each extra minute pushes more oil to the surface and burns off more of the flavors the coffee brought from the farm.
Where the roaster stops decides the name. Wikipedia's roast table places Vienna roast in the middle of second crack, with light surface oil and a bittersweet caramel cup; French roast at the end of second crack, shiny with oil, where roast character dominates; and Italian roast nearly black, with acidity almost gone and a thin body.

What people like about it
Dark roast stands up to milk and sugar, and the roast flavor keeps one bag close to the next even as the beans inside change. Our plan builder describes it as roasty, heavy and good with milk. Wikipedia's summary says full-bodied, bittersweet flavors are prominent and the flavors linger on the tongue.
Dark is not stronger in caffeine. Caffeine survives roasting almost untouched, and because dark beans lose more mass and swell more, a scoop of dark roast by volume holds slightly less caffeine than a scoop of light. The strength people notice is flavor.
Dark roasts from Massachusetts roasters

Does dark roast have more caffeine than light roast?
No. Roasting barely changes caffeine, and measured by the scoop a dark roast holds slightly less, because its beans are lighter and larger after roasting.
Is French roast the same as dark roast?
French roast is one kind of dark roast, taken to the end of second crack. Vienna is a little lighter and Italian darker.
