Medium roast, defined
Medium roast is coffee roasted through first crack and stopped before second crack. The beans turn an even medium brown with a dry surface. Sugars caramelize further than in a light roast, acidity is muted and the body is fuller, so the cup tastes of caramel, chocolate and nuts while keeping some of the coffee's origin.
American, city, full city: the names inside medium
Medium covers a range, and the traditional American names mark steps along it. Wikipedia's coffee roasting page gives each one a rough bean temperature and a short description:

Past full city, the beans are in second crack and the roast is dark. Below American, they are light. Massachusetts roasters use the old names too: Armeno in Northborough calls its House Blend full city, and Mike Shea's in Bridgewater describes its Iron Bars Espresso as a full city, medium-dark blend.
How medium roast tastes
In Wikipedia's words, medium roasts have sugars further caramelized and acidity muted, which gives a higher body with some roast flavor imposed. Our plan builder puts it as chocolate, caramel, easy every day.
That balance is why medium is the home of the house blend. A roaster's everyday coffee has to work black and with milk, in a drip machine at the office and a French press at home, and a medium roast does all of that without asking much of the drinker. It still leaves room for the coffee's origin: a medium roast Colombian and a medium roast Sumatran taste clearly different.

Offerings change, so check the roaster's own shop for what is current. These roasters are local favorites we list, and a listing does not mean the roaster is part of the club.
