What is light roast?
Light roast is coffee that comes out of the roaster soon after first crack, the popping sound beans make near 196 °C (385 °F). The beans stay light brown with a dry surface, and the cup keeps more of the coffee's own flavors from its farm and process, with more acidity and a lighter body than darker roasts.
Roasters use many names for this end of the scale: cinnamon, New England, half city, American. On a Massachusetts bag you will see "light", "light-medium" or a roaster's own label, such as Broadsheet's color coded flavor families.
How a light roast is made
Green coffee goes into a hot drum. For the first minutes the beans dry out and turn yellow. Then moisture inside turns to steam, pressure builds, and the beans crack open with an audible pop and swell in size. That is first crack. A light roast is dropped out of the drum during first crack or shortly after, before the sugars caramelize far and before any oil reaches the surface.
Stopping early is harder than it sounds. Roast too briefly and the cup tastes of toasted grain and grass, with sharp acidity and little sweetness, the way Wikipedia's roast table describes the very lightest level. Roasters who specialize in light coffee spend their effort on getting sweetness developed inside a short window. What light roast tastes like
Wikipedia's summary of roast levels gives light roasts a lighter body, higher acidity and no obvious roast flavor, with grassy or fruity notes possible. It calls this the level for tasting a coffee's full origin character: the flavors that come from its variety, its processing, the altitude and the weather where it grew.
That is why roasters put their most distinctive single origins in light roasts. One common belief runs the wrong way. Light roast does not have less caffeine. Caffeine barely changes in the roaster, and because darker beans lose more mass and swell more, a scoop of light roast by volume holds a little more caffeine than the same scoop of dark.
