Shirley

Wavelength Coffee Roasters works from a 5,000 square foot roastery on Shaker Road and packs its beans in reusable steel cans. It picks coffees under five themes, among them women-owned farms and climate-hardy varieties. Visitors are welcome on weekdays if they call ahead, and the bags turn up at Wilson Farm in Lexington and Concord Market.

Tiny Arms roasts on a Loring and sells Kate Cutlip's handmade ceramic cups next to the coffee. Its seasonal espresso is called Earthtones and its decaf Slow Down.

Newbery Street Coffee Roasters calls itself a cloud roaster, roasting in Shirley on a Loring, and centers on Thai specialty coffee. It has no cafe; the team usually runs a weekend pop-up at Merai Bar in Brookline, and Clear Flour Bread and Brookline Booksmith stock the bags.

Harvard and Acton

Muddy Water Coffee Roasters sells only organic coffee, most of it Fair Trade too, and roasts after you order. Its bags are at Carlson Orchards in Harvard, Clark Farm Market in Carlisle and Concord Market.

George Howell Coffee roasts single estate coffees at 312 School Street in Acton, where visitors can stop in for a fresh bag. Its cafes are in Boston and Newtonville.

Shirley's coffee story

George Howell ran The Coffee Connection in Massachusetts from 1974 until he sold it to Starbucks in 1994. A decade later he opened his Acton roastery, and his daughter Jenny now travels to the farms with him.

Tiny Arms came to Shirley from Lowell. Jon and Kate opened a small cafe near Lowell's center in 2021, moved their roasting onto a Loring on January 3, 2022, and sold the cafe in 2023 to put everything into roasting. The name came from a game of making up business names on a trip to Brooklyn: Kate saw a T. rex and said Tiny Arms. She studied industrial design at Pratt and began roasting for the company in 2023.

Pack Katisomsakul worked in travel tech and hospitality before coffee took hold of him during the pandemic. According to the company, he placed third at the US Brewers Cup in 2024 and 2025.

Wavelength is Jim and Deanna Varney, whose careers were in engineering and research. Muddy Water owner Tim Van Sipe roasted at home until friends and family kept asking for more, then moved from his basement to a leased space with a 10 kilo roaster.
