Their story
Pavement opened in 2009 with the aim of giving Boston neighborhoods an easygoing coffeehouse built around the coffees its team liked most. Beans come from family farms and regional co-ops through exporters and importers it trusts, and are roasted in small batches. Bagels are a second focus: the dough ferments and rests overnight, then is kettle boiled and baked in a rotating stone hearth.
Blends are adjusted through the year as harvests change, with fresh lots rotated in while the flavor profile stays steady. A few single origins are carried year round next to a changing list of microlots. Its wholesale arm helps other cafes and shops with equipment and workflow choices, recipes and printed materials, and offers manager training, on-site workshops and cuppings. Catering covers coffee and house bagels, needs at least 48 hours notice, and has a $100 minimum for delivery.

House blends include Rathskeller House Blend, Three of Cups Blend, Pavement Dark and Summer Camp Seasonal Blend. Single origins on the list when we checked: Yuli Ramirez, Antioquia, Colombia, Zaperoco, Huila, Colombia and Shoondhisa Natural, Guji, Ethiopia. Decaf: Decaf Colombia. The name refers to city streets, which the company sees as shared ground that links people across town. The Tufts University cafe inside the Joyce Cummings Center is the company's tenth location.
