barismo is one of the beloved local roasters we follow in Massachusetts: an independent roaster based in Arlington, founded in 2008. Here is what their own pages and public sources say about them, in our words.
Their story
The company grew out of a circle of baristas who met to taste and roast coffee and started blogging about it in 2006. In January 2008 it installed two customized four kilo roasters in a tiny East Arlington storefront and put most of its early budget into coffee bought directly from farms. Its Cambridge coffeebar opened in 2012 in the old F.B. Hubley Auction House. Roasting later returned to the original Arlington address.
In its first year it kept green coffee in vacuum sealed bags or GrainPro liners, a practice the company says peer roasters found odd back then. Within a few years the Arlington storefront added a small bar that brewed rotating manual methods such as pour overs and syphons next to a basic espresso service. The Cambridge cafe opened in spring 2012 under the name dwelltime and is now called barismo 364. It has a full kitchen and bakery, and the company says it made best of lists from Eater, Time Out and Boston Globe Magazine.
In 2014 barismo moved its roasting and wholesale base into a former envelope factory in Somerville shared with Aeronaut Brewing, Daily Coffee News reported, quoting co-founder and president Jaime VanSchyndel. The company publishes the prices it pays for green coffee, which it says run up to three or four times the commodity market price, and lists how long it has bought from each producer.
